Cookies. Whole cookbooks have been written featuring nothing but the humble cookie. As one of the first sweets we are allowed to enjoy as a toddler to grandparents in old age, we all love cookies! Cookies are great bake sale items, they are great after-school treats, go perfect in lunchboxes and are great for picnics as they are very portable and not too messy. Here are recipes for easy to make cookies that will please all the generations of your family. All of these recipes have ingredients that make them a more healthy alternative to most cookies. CHOCOLATE WALNUT COOKIES
2 pkgs (8 squares each) semi-sweet baking chocolate, divided
3/4 cup firmly packed brown sugar
1/4 cup butter, slightly softened
2 eggs
1 tsp vanilla
1/2 cup all-purpose flour
1/4 tsp baking powder
2 cups chopped walnuts
Preheat oven to 350 degrees.
Coarsely chop 8 of the chocolate squares; set aside. Microwave the remaining 8 chocolate squares in a large microwavable bowl on high for 2 minutes; stir after 1 minute. Stir until all the chocolate is completely melted. Add the brown sugar, butter, eggs, and vanilla. Stir the mixture with a wooden spoon until it is well blended. Add the flour and baking powder; mix well. Stir in the chopped chocolate and the walnuts. Drop by rounded tablespoonfuls of dough onto ungreased baking sheets.
Bake at 350 degrees for 12 to 13 minutes or until puffed and shiny. Cool for a minute before removing from the baking sheets to wire racks to cool completely.
Yield: about 30 cookies
YUMMY WHOLE WHEAT CHOCOLATE CHIP COOKIES
3/4 cup packed brown sugar
3/4 cup granulated sugar
1 cup butter, softened
1 tsp vanilla extract
1 egg
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 pkg (12-oz) chocolate chip cookies
1 cup chopped pecans, optional
Preheat oven to 375 degrees.
In a large bowl stir together the brown sugar, granulated sugar, butter, vanilla extract, and egg until well blended. Stir in the flour, baking soda, and salt. This will produce a stiff dough! Stir in the chocolate chips and the pecans, if using. Drop by rounded tablespoonfuls, about 2-inches apart, on ungreased cookie sheets.
Bake at 375 degrees 8 to 10 minutes or until light brown with the centers still soft. Cool slightly before attempting to remove from the cookie sheets. Cool completely on wire racks.
Yield: Approximately 3 dozen cookies.
Note: If you want your cookies lighter, use 1 1/2 cups whole-wheat flour and 1/2 cup all-purpose flour.
IRRESISTIBLE PEANUT BUTTER COOKIES
1/4 cup butter
1/4 cup vegetable shortening*
3/4 cup peanut butter (creamy works best)
1 1/4 cups firmly packed brown sugar
3 tbsps milk or cream
1 tbsp vanilla extract
1 large egg
1 1/4 cups all-purpose flour
1/2 cup whole-wheat flour**
3/4 tsp baking soda
1/2 tsp salt
Preheat oven to 375 degrees.
Lightly spray cookie sheets with nonstick cooking spray; set aside.
In a medium mixing bowl, combine butter, shortening, peanut butter, brown sugar, milk or cream, and vanilla. Beat at medium speed until well blended; add egg. Beat until blended in. Combine the flours, baking soda, and salt; add to the creamed mixture using low speed.
Drop by rounded tablespoonfuls about two inches apart onto prepared cookie sheets. Flatten slightly using the tines of a fork. Bake at 375 degrees for 7 to 8 minutes or until set and just starting to brown. Allow to cool for a couple of minutes on the cookie sheets before removing to wire racks to cool completely.
Yield: Approximately 3 dozen.
*Substitute no sugar added applesauce for a healthier cookie.
**The whole-wheat flour makes your cookies healthier. You can, however, use all-purpose instead.
